Heat over to 375 degrees. Lightly grease a baking sheet. Stir together in a large bowl 1 cup of All-Purpose Flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of ginger.
Add 1 cup of brown sugar (packed) and 1 cup of rolled oats. Then mix in thoroughly 1/4 cup of vegetable oil, 2 tablespoons of milk and 1 egg. Then stir in 3/4 cup of chopped walnuts if you like. Or add 3/4 cup of semi-sweet chocolate chips if you want to. Or 3/4 cup of raisins for an extra zing!

Drop dough by rounded teaspoons about 2 inches apart on the baking sheet. Bake for about 10 minutes then cool on a wire rack. This recipe makes about 3 dozen cookies! Great with a hot cup of coffee or tea for you or a tall glass of milk for your kids.
