CRISP PASTEL COOKIES
Heat oven to 400 degrees. Mix 1/2 cup sugar, 1/2 cup shortening or oil, 1/4 cup margarine or butter (softened) 1 teaspoon vanilla, 2 eggs and 1 package (3 oz) of your favorite flavored gelatin (dry). For example, if it's St. Patrick's Day and you want delicious green cookies, mix in lime gelatin from Jello or it's Christmas, mix in Raspberry Gelatin. Stir in 2 1/2 cups of flour, 1 teaspoon baking powder and 1/4 teaspoon of salt.
After mixing, shape dough into 3/4 inch balls. Place 3 inches apart on an ungreased cookie sheet. Flatten them with the bottom of a glass dipped in sugar. Bake 6 to 8 minutes. This recipe makes about 5 dozen small cookies. Decorate any way you like or just eat plain. Delicious and best part of all is that you can make all flavors and colors to suit any season or event.
