SALTED PEANUT CRISPS
Heat oven to 375 degrees. Lightly grease a baking sheet. Mix 1 cup of shortening (1/2 butter in this cup would be best), 1 1/2 cups of brown sugar (packed), 2 eggs, and 2 teaspoons of vanilla all in a large bowl. Stir together in another bowl 3 cups of All Purpose Flour, 1 teaspoon of salt and 1/2 teaspoon of baking soda. Mix all these dry ingredients into the shortening mixture. Then stir in 2 cups of salted peanuts.
Drop dough by rounded teaspoonfuls about 2 inches apart on a baking sheet. Grease the bottom of a glass. Dip the glass in sugar and then flatten each cookie. bake 8 to 10 minutes. Cool on a wire rack. This recipe makes about 6 dozen small cookies. Delicious concoction!!
